Neroli is the steam-distilled oil of bitter orange blossom. It should not be confused with orange blossom absolute, which is solvent-extracted from the same flower and is a heavier, sweeter, more indolic material, nor with petitgrain, distilled from the leaf and twig.

Neroli is green, honeyed and radiant, with a clean bitter-floral lift and a metallic brightness that no synthetic reconstruction quite reproduces. Yield is very low — on the order of one kilogram of oil per tonne of flower — which is the whole explanation for the price.

Flowers must be processed within hours of picking. Delay is visible in the finished oil.

Neroli or orange blossom absolute — which do I need?
They come from the same flower but are not interchangeable. Neroli is distilled: greener, brighter, more radiant, with a clean bitter lift. Orange blossom absolute is solvent-extracted: heavier, sweeter, more indolic and honeyed, with much greater tenacity. Choose neroli for lift and freshness, absolute for depth and persistence.
