Why Is Orris So Expensive?

Orris costs what it costs because you are paying for half a decade of storage before the material becomes aromatic at all.

Orris butter is routinely cited among the most expensive materials in perfumery, frequently quoted at levels comparable to or above fine agarwood oil. Unlike many expensive naturals, the reason has nothing to do with rarity of the plant. Iris pallida grows perfectly well.

The rhizome is not aromatic when you dig it up

This is the crux. A freshly lifted iris rhizome does not smell of orris. The irones responsible for orris's violet-like character are largely absent in the fresh material. They form slowly, through oxidative breakdown of triterpenoid precursors, during years of dry storage.

Standard practice is to lift rhizomes after roughly three years of growth, then dry and store them for a further three to five years before processing. Only then is there enough irone content to justify distillation.

What that does to the economics

  4. 04Distillation at a yield measured in fractions of a percent.

By the time a kilogram of orris butter is produced, the producer has carried the cost for the better part of a decade, absorbed storage and insurance across that period, and taken the risk that the market has moved. The price is stored working capital and accumulated risk, not scarcity theatre.

Butter, concrete and absolute

Orris butter is the steam-distilled product. It is solid at room temperature because of its high myristic acid content, which is where 'butter' comes from. It is generally regarded as the finest form.

Orris concrete is solvent-extracted. Orris absolute is that concrete washed with alcohol to remove waxes, producing a pourable material with a somewhat different and generally less prized profile. Prices differ substantially between the three, and a quotation that just says 'orris' has not told you what is being offered.

Because of the price, orris is one of the most frequently adulterated materials in the category. Synthetic alpha-irone is widely available and considerably cheaper. A GC-MS on the specific lot is the practical defence.
